CSA Week 1 (2019)

The first CSA pick up of the 2019 season is today!  We’re very excited to start seeing our members on a weekly basis and sharing the delicious food we’ve been growing.  In this week’s share you can expect:

  • lettuce
  • kale
  • spinach
  • scallions
  • parsley
  • garlic scapes
  • carrots

Spring is all about greens.  To help you make use of every single bit of green in this week’s share, here’s a recipe for carrot top gremolata (kinda like  pesto):

Carrot Top Gremolata Ingredients:

2/3 cup finely chopped carrot tops
¼ tsp salt
2 garlic cloves (or 1 garlic scape) finely chopped
1 tablespoon finely grated lemon zest
2 teaspoons extra-virgin olive oil

Instructions:

  1. Combine tops with garlic, lemon zest, oil, and salt in a small bowl.
  2. Add gremolata to roasted carrots or other sweet roasted vegetables.
